october pumpkin contest

                                            "pumpkin  -fied " challenge
                   
                      HOLIDAY PUMPKIN  TRIFLE
I THOUGHT THIS RECIPE WOULD BE GREAT FOR THE OCTOBER "PUMPKIN -FIED  RECIPE CHALLENGE.IT CONSIST OF 3 KINDS OF PUMPKIN RECIPES IN ONE!  1-PUMPKIN CAKE
2-PUMPKIN CREAM  3-PUMPKIN CUSTARD
                                                        ENJOY!!!!!!!!!!!!!!!!!!!!!!



                              DON'T BE IMTIMIDATED BY  THE VARIOUS LAYERS.IT REALLY IS SIMPLE TO MAKE    
                                        AND  ASSEMBLE ..ALL LAYERS CAN BE MADE A DAY IN ADVANCE AND ASSEMBLED
                                                                  TWO HOURS BEFORE SERVING.

PUMPKIN CAKE [MAKES 4 LAYERS]
                                                                                               
1 C  SUGAR                                                                                           
2/3 C VEGAN  BUTTER [ROOM TEMPERATURE]
2/3 C  CANNED PUMPKIN
1 C SOY MILK
1 Tbsp WHITE VINEGAR
1 tsp VANILLA
2 tsp GRATED ORANGE PEEL
 1 tsp GROUND CINNAMON
4 C ALL-PURPOSE FLOUR
2 tsp BAKING POWDER
1 tsp BAKING SODA
 
TO MAKE THE CAKE

Preheat oven to 350 and oil and flour  four 8 " round cake pans. combine  the sugar and butter in a large bowl with a wooden spoon till creamy.stir in soy milk ,vinegar,vanilla,orange peel, and cinnamon.
   Combine the flour,baking powder and baking soda in a separate bowl.add to the pumpkin mixture and stir till smooth.
pour evenly into prepared pans bake for 28 minutes.

Pumpkin cream [ makes 3 trifle layers]

1 1/2c silken tofu,well drained
1 c canned pumpkin
1 c soy cream cheese
2/3 c granulated sugar
2 tsp ground cinnamon
2 tsp vanilla

To make cream
Combine all ingredients in blender until smooth  and chill.

 
Pumpkin custard [makes 1 trifle layer]

2 TB cornstarch
1 c soymilk
 1/3 c canned pumpkin
1/3 c brown sugar
1 tsp vanilla
1/2 tsp ground cinnamon
1/2 tsp grated orange rind
 
To make custard

place cornstarch in a medium  saucepan .whisk in 1/4 c of the soymilk and cook  on medium heat ,whisking constantly for 2 to 4 minutes until smooth and thick.do not let mixture come to a boil. whisk in the remaining soymilk and the remaining ingredients and cook until mixture thickens about 10 minutes .refrigerate for 3 to 6 hours,before assembling the trifle.


Cran-razz Relish [ makes 3 trifle layers]

2/3 c fresh or frozen cranberries
1/4 c sugar
2 tsp grated orange peel
2/3 c raspberry preserves

To make relish

combine the cranberries,sugar,and orange peel in blender and process until chunky.stir in preserves


 Walnut topping [makes 1 trifle layer]

1/3 c chopped walnuts
2 tbsp brown sugar
2 tbsp vegan butter
1/2 tsp ground cinnamon

To make topping

combine all ingredients in a small sauce pan  ,cook on low heat ,stirring constantly for 1or 2 minutes.until sugar and vegan butter is melted tranferr to a small bowl and let cool



To assemble the trifle

layer the cake and fillings in an 8 " trifle bowl for the total  of 12 layers starting from bottom of trifle as follows:

layer 1 [bottom] pumpkin cake
layer 2 pumpkin cream
layer 3 pumpkin cake
layer 4 cran-razz relish
layer 5 pumpkin cream
layer 6 pumpkin cake
layer 7 cran-razz relish
layer 8 pumpkin custard
layer 9 pumpkin cake
layer 10 cran-razz relish
layer 11 pumpkin cream
layer 12 [top] walnut topping



NOW!!!!!!!      THAT IS WHAT YOU CALL WHIPPING  UP                      SOME   " PUMPKIN -FIED"   DESSERT!!!!!!!!

THIS WAS DELICIOUS!!!!! I PUT SOME CAN APRICOTS ON TOP TOO .THE GLAZE WAS A LITTLE BIT  TOO SWEET I THOUGH, AND .I COULD STILL TASTE THE SUGAR GRANULES IN THE GRAHAM CRACKER  CRUST ,LOOKS LIKE THE SUGAR WOULD HAVE  DISSOLVE AFTER BAKING FOR 75 MINUTES.ANY BODY ELSE HAVE THAT PROBLEM?  WELL  FIRST OF ALL, I HAVE NEVER COOKED BULGUR .AND ACCORDING TO THIS RECIPE IT DIDN'T REQUIRE MUCH COOKING.I THOUGHT,  WOW, HOW NICE!!! THEN WHEN I I WAS MIXING THE BULGUR WITH THE TAMARI AND THE OTHER SPICES IT KINDA RESEMBLED GROUND BEEF.
     THIS WAS THE BEST CABBAGE ROLL I HAVE EVER MADE! THE FILLING HAD JUST ENOUGH SPICY KICK TO IT,THAT MADE IT TASTE WONDERFUL AND THE TEXTURE OF THE BULGUR WAS PERFECT FOR THIS RECIPE .I DEFIANTLY WILL BE USING BULGUR AGAIN SOON!! THIS RECIPE RATES A 10 WITH ME.  MY HUSBAND AND I AND MY MOM CLEANED UP THIS DISH .SO I SAY THIS WILL BE A REGULAR IN MY HOUSE .

I USED FRESH ROSEMARY IN THE  ROASTING OF THE VEGETABLES BECAUSE I STILL HAD SOME GROWING IN THE BACK YARD.THIS IS THE FIRST TIME I HAVE USED PARSNIPS .BUT THEY GAVE THE SOUP A GOOD FLAVOR.THE YAMS IN THE SOUP WAS REALLY GOOD. MUCH BETTER THAN JUST PLAIN POTATO SOUP.I WILL BE MAKING THIS AGAIN SOON .I RATE THIS ONE A 10 .

THESE BANANA BARS WERE WONDERFUL .I USED THE TOFU AS MY EGG REPLACER ,SINCE IT DONE SO WELL IN WOLFFIE'S  MOIST BROWNIES ON OCTOBER 15 .
AND I AM GLAD I DID !!THESE BARS WERE SUPER MOIST!!
  THE ONLY THING I WOULD DO DIFFERENT ,I WOULDN'T ADD THE VEGAN CHOCOLATE CHIPS . AS MY MOM PUT IT "THE CHIPS  DIDN'T REALLY ADD ANY THING  SPECIAL TO IT "
     I WILL TRY THE WALNUTS NEXT TIME .YES, IT WILL DEFINITELY BE A NEXT TIME.THIS  WILL BE A REGULAR AT MY HOUSE .THIS IS A GREAT RECIPE FOR WRAPPING UP AND TAKING WITH YOU FOR A SNACK OR TO CARRY WITH YOUR LUNCH.THIS RECIPE GETS A 10 FROM ME !!!!!!

WELL,I AM GLAD I HAD  ANOTHER RECIPE WHERE I COULD USE SOME MORE OF THE KALAMATA  OLIVES THAT WERE  LEFT OVER IN THE REFRIGERATOR  .THIS IS A WHIP IT UP AND WHIP IT OUT RECIPE ,VERY EASY .THE ONLY THING WAS THE OLIVE PASTE WAS A LITTLE TOO  OILY .I CHECKED THE RECIPE TO SEE IF I HAD MISS READ IT,  BUT IT SAID 2 1/2 TABLE SPOONS OF OIL. THE OIL WANTED TO RISE TO THE TOP . NEXT TIME I WILL DEFINITELY DECREASE THE AMOUNT OF OIL.BY HALF.I DON'T REALLY CARE FOR OLIVES SO I CAN'T RATE THIS RECIPE FAIRLY .I ATE HALF OF A STUFFED CHERRY TOMATO AND THAT WAS ENOUGH OF OLIVE  TASTE FOR ME .

I DIDN'T THINK I WOULD LIKE A TOFU MEAT BALL ,BUT THESE WERE VERY ,VERY TASTY !!!AND THEY FRIED UP IN NO TIME.I MADE THE PASTA SAUCE TO GO WITH  IT THAT WAS ALSO VERY TASTY.I USED TOMATOES I HAD FROM THE GARDEN INSTEAD OF THE TOMATO SAUCE .I HAVE NEVER USED CELERY AND CARROTS IN PASTA SAUCE BUT HEY ...IT WORKS!!THE TOFU BALLS JUST MELT IN YOUR MOUTH.EVERYONE IN THE FAMILY LOVED THEM .THE TOFU BALLS STUCK TOGETHER WELL TOO WHEN I MADE THEM INTO BALLS AND ROLLED THEM IN FLOUR.LIKE I SAID EASY AND TASTY.10 ++++

THIS SALAD  REMINDS ME OF A  COMBINATION OF 2 OF MY FAVORITE FOODS, PIZZA AND PASTA .THE VEGAN  PEPERONI'S TASTED JUST LIKE THE REAL THING .I HAVE TO ADMIT THIS IS THE FIRST TIME I HAVE EVER TRYED THE VEGAN PEPERONI'S .I USUALLY JUST MAKE VEGGIE PIZZAS .BUT THIS IS ONE GOOD THING ABOUT NEW RECIPES YOU TRY NEW INGREDIENTS.AND I HAVE TO SAY THE OLIVES WEREN'T BAD EITHER FOR A NON OLIVE LOVER.MAYBE I AM GETTING USE  TO OLIVES BY HAVING TO USE  THEM IN THIS COOKING CHALLENGE.BUT I AM GLAD CAUSE OLIVES HAVE GOOD HEALTH BENEFITS.

THIS RECIPE WAS A LITTLE BLAND I THOUGHT .I ADDED SOME RED PEPPERS AND A LITTLE CAYNEE PEPPER.I LIKE THE THE COMBINATION OF ASPARAGUS AND THE EDAMAME TOGEATHER.I THINK NEXT TIME I WOULD PUT A LITTLE LESS BALSAMIC VINEGAR IN IT.MY COUSCOUS STUCK TO THE BOTTOM OF THE PAN ,AND I  REMOVED IT FROM THE HEAT LIKE THE RECIPE SAID.

THIS WAS A VERY SIMPLE  AND QUICK RECIPE .MY ONLY PROBLEM  WAS THE ICE CREAM MELTED TO FAST BEFORE I COULD GET A GOOD PICTURE,BECAUSE THE PEACHES WERE STILL WARM.BUT IT WAS STILL DELICIOUS .I LOVED THE CINNAMON IN THE PEACHES .I THINK THE SHORT CAKE COULD HAVE BEEN A LITTLE SWEETER.MY RECIPE ENDED UP MAKING 3 LARGE SHORT CAKES INSTEAD OF 2..THIS SHORTCAKE GETS A 9 FROM ME .

WELL, WE HAD COMPANY COMING TONIGHT SO I THOUGHT IT WOULD BE A GOOD TIME TO MAKE THE COOKIE RECIPE .THEY WERE A LITTLE HARD TO MIX UP .MAYBE NEXT TIME I WILL MELT THE BUTTER BEFORE I TRY TO MIX IT .MIXING WITH THE SPOON DIDN'T CUT  IT ,SO I MIXED AND NEADED WITH MY HANDS AND FINALLY IT STARTED COMING TOGETHER  I USED PEANUT BUTTER IN MINE FOR THE NUT BUTTER..THEY WERE DONE IN 10 MINUTES FLAT .THE RECIPE SAID IT WOULD MAKE  12 COOKIES MINE MADE 18 .THEY WERE SUPER MOIST.AND DECLIOUS.I THINK NEXT TIME I WOULD ADD WALNUTS TOO.I RATE THIS COOKIE AN 9 .

THESE WERE VERY EASY AND DELICIOUS!AND VERY ,VERY ,FILLING!!!!!
THE ONLY THING I WAS DISAPPOINTED IN WAS I REALLY COULDN'T TASTE THE SWEET POTATO IN IT .THE BEAN MIXTURE HAD EXCELLENT FLAVOR.I LOVE THE SPICE CUMIN.MY MOM AND HUSBAND GAVE IT THUMBS UP !YOU HAVE TO WATCH THE BEAN POT WHEN IT IS COOKING AND KEEP STIRRING OR THEY WILL STICK.

WELL IT MAY LOOK LIKE CHICKEN ,IT MAY SPELL A LITTLE LIKE CHICKEN ...BUT IT SURE DIDN'T  TASTE LIKE CHICKEN.I WAS VERY DISAPPOINTED ,IT WAS SO TOUGH WE COULDN'T EVEN CHEW IT .I DID BAKE IT TO GET A CHEWIER TEXTURE ,LIKE THE RECIPE SAID YOU COULD DO ..BUT NEXT TIME I WILL BOIL THEN JUST FRY IT WITHOUT BAKING IT .I NEVER HAVE HAD MUCH LUCK WITH THE GLUTEN RECIPES .ALWAYS SEEM TO DISAPPOINT.HOPE YOU GUYS HAVE A BETTER TURN OUT. SO WE HAD MASH POTATOES AND ASPARAGUS AND HOMEMADE ROLLS FOR SUPPER.I AM NOT EVEN GOING TO RATE THIS ONE.

I LOVED THIS RECIPE !!SO EASY AND VERY PRETTY .NICE DESSERT FOR GUEST.AND BEST OF  ALL  HEALTHY!!!!.NEVER THOUGHT ABOUT RASPBERRIES AND APPLES TOGETHER BUT I WILL NOW!!!!!!!  I DECIDED TO DECORATE THE TOP OF THE CRISP WITH 1 RASPBERRIES AND 6 BAKED APPLE SLICES SINCE I HAD AN APPLE LEFT OVER. THE TOP GOT NICE AND CRUNCHY THE WAY A CRISP SHOULD BE .I MADE SOME CASHEW CREAM TO GO ON TOP [4 OUNCES RAW CASHEWS,SOAKED,1/2 C WATER DASH OF MAPLE SYRUP,AND A DROP OF VANILLA ]JUST BLEND TILL SMOOTH.SOOOOO GOOOOOOD!!!!!!!!!!!TRY IT YOU WILL LIKE IT .   HAHA
THE  CRISP WAS NOT TOO SWEET BUT JUST THE RIGHT AMOUNT OF SUGAR.
I GIVE THIS RECIPE A 10!!!!! I WOULDN'T CHANGE A THING .
