october pumpkin contest

                                            "pumpkin  -fied " challenge
                   
                      HOLIDAY PUMPKIN  TRIFLE
I THOUGHT THIS RECIPE WOULD BE GREAT FOR THE OCTOBER "PUMPKIN -FIED  RECIPE CHALLENGE.IT CONSIST OF 3 KINDS OF PUMPKIN RECIPES IN ONE!  1-PUMPKIN CAKE
2-PUMPKIN CREAM  3-PUMPKIN CUSTARD
                                                        ENJOY!!!!!!!!!!!!!!!!!!!!!!



                              DON'T BE IMTIMIDATED BY  THE VARIOUS LAYERS.IT REALLY IS SIMPLE TO MAKE    
                                        AND  ASSEMBLE ..ALL LAYERS CAN BE MADE A DAY IN ADVANCE AND ASSEMBLED
                                                                  TWO HOURS BEFORE SERVING.

PUMPKIN CAKE [MAKES 4 LAYERS]
                                                                                               
1 C  SUGAR                                                                                           
2/3 C VEGAN  BUTTER [ROOM TEMPERATURE]
2/3 C  CANNED PUMPKIN
1 C SOY MILK
1 Tbsp WHITE VINEGAR
1 tsp VANILLA
2 tsp GRATED ORANGE PEEL
 1 tsp GROUND CINNAMON
4 C ALL-PURPOSE FLOUR
2 tsp BAKING POWDER
1 tsp BAKING SODA
 
TO MAKE THE CAKE

Preheat oven to 350 and oil and flour  four 8 " round cake pans. combine  the sugar and butter in a large bowl with a wooden spoon till creamy.stir in soy milk ,vinegar,vanilla,orange peel, and cinnamon.
   Combine the flour,baking powder and baking soda in a separate bowl.add to the pumpkin mixture and stir till smooth.
pour evenly into prepared pans bake for 28 minutes.

Pumpkin cream [ makes 3 trifle layers]

1 1/2c silken tofu,well drained
1 c canned pumpkin
1 c soy cream cheese
2/3 c granulated sugar
2 tsp ground cinnamon
2 tsp vanilla

To make cream
Combine all ingredients in blender until smooth  and chill.

 
Pumpkin custard [makes 1 trifle layer]

2 TB cornstarch
1 c soymilk
 1/3 c canned pumpkin
1/3 c brown sugar
1 tsp vanilla
1/2 tsp ground cinnamon
1/2 tsp grated orange rind
 
To make custard

place cornstarch in a medium  saucepan .whisk in 1/4 c of the soymilk and cook  on medium heat ,whisking constantly for 2 to 4 minutes until smooth and thick.do not let mixture come to a boil. whisk in the remaining soymilk and the remaining ingredients and cook until mixture thickens about 10 minutes .refrigerate for 3 to 6 hours,before assembling the trifle.


Cran-razz Relish [ makes 3 trifle layers]

2/3 c fresh or frozen cranberries
1/4 c sugar
2 tsp grated orange peel
2/3 c raspberry preserves

To make relish

combine the cranberries,sugar,and orange peel in blender and process until chunky.stir in preserves


 Walnut topping [makes 1 trifle layer]

1/3 c chopped walnuts
2 tbsp brown sugar
2 tbsp vegan butter
1/2 tsp ground cinnamon

To make topping

combine all ingredients in a small sauce pan  ,cook on low heat ,stirring constantly for 1or 2 minutes.until sugar and vegan butter is melted tranferr to a small bowl and let cool



To assemble the trifle

layer the cake and fillings in an 8 " trifle bowl for the total  of 12 layers starting from bottom of trifle as follows:

layer 1 [bottom] pumpkin cake
layer 2 pumpkin cream
layer 3 pumpkin cake
layer 4 cran-razz relish
layer 5 pumpkin cream
layer 6 pumpkin cake
layer 7 cran-razz relish
layer 8 pumpkin custard
layer 9 pumpkin cake
layer 10 cran-razz relish
layer 11 pumpkin cream
layer 12 [top] walnut topping



NOW!!!!!!!      THAT IS WHAT YOU CALL WHIPPING  UP                      SOME   " PUMPKIN -FIED"   DESSERT!!!!!!!!

THIS WAS DELICIOUS!!!!! I PUT SOME CAN APRICOTS ON TOP TOO .THE GLAZE WAS A LITTLE BIT  TOO SWEET I THOUGH, AND .I COULD STILL TASTE THE SUGAR GRANULES IN THE GRAHAM CRACKER  CRUST ,LOOKS LIKE THE SUGAR WOULD HAVE  DISSOLVE AFTER BAKING FOR 75 MINUTES.ANY BODY ELSE HAVE THAT PROBLEM? THIS RECIPE WAS A LITTLE MORE TIME CONSUMING THAN MOST OF SARAH'S.I GIVE THIS ONE A 9

 WELL  FIRST OF ALL, I HAVE NEVER COOKED BULGUR .AND ACCORDING TO THIS RECIPE IT DIDN'T REQUIRE MUCH COOKING.I THOUGHT,  WOW, HOW NICE!!! THEN WHEN I I WAS MIXING THE BULGUR WITH THE TAMARI AND THE OTHER SPICES IT KINDA RESEMBLED GROUND BEEF.
     THIS WAS THE BEST CABBAGE ROLL I HAVE EVER MADE! THE FILLING HAD JUST ENOUGH SPICY KICK TO IT,THAT MADE IT TASTE WONDERFUL AND THE TEXTURE OF THE BULGUR WAS PERFECT FOR THIS RECIPE .I DEFIANTLY WILL BE USING BULGUR AGAIN SOON!! THIS RECIPE RATES A 10 WITH ME.  MY HUSBAND AND I AND MY MOM CLEANED UP THIS DISH .SO I SAY THIS WILL BE A REGULAR IN MY HOUSE .

THIS SOUP WAS DELICIOUS ! I USED FRESH ROSEMARY IN THE  ROASTING OF THE VEGETABLES BECAUSE I STILL HAD SOME GROWING IN THE BACK YARD.THIS IS THE FIRST TIME I HAVE USED PARSNIPS .BUT THEY GAVE THE SOUP A GOOD FLAVOR.THE YAMS IN THE SOUP WAS REALLY GOOD. MUCH BETTER THAN JUST PLAIN POTATO SOUP.I WILL BE MAKING THIS AGAIN SOON .I RATE THIS ONE A 10 .

                       ADDED SOME VEGAN ICE CREAM AND  RASPBERRY SAUCE


THESE BANANA BARS WERE WONDERFUL .I USED THE TOFU AS MY EGG REPLACER ,SINCE IT DONE SO WELL IN WOLFFIE'S  MOIST BROWNIES ON OCTOBER 15 .
AND I AM GLAD I DID !!THESE BARS WERE SUPER MOIST!!
  THE ONLY THING I WOULD DO DIFFERENT ,I WOULDN'T ADD THE VEGAN CHOCOLATE CHIPS . AS MY MOM PUT IT "THE CHIPS  DIDN'T REALLY ADD ANY THING  SPECIAL TO IT "
     I WILL TRY THE WALNUTS NEXT TIME .YES, IT WILL DEFINITELY BE A NEXT TIME.THIS  WILL BE A REGULAR AT MY HOUSE .THIS IS A GREAT RECIPE FOR WRAPPING UP AND TAKING WITH YOU FOR A SNACK OR TO CARRY WITH YOUR LUNCH.THIS RECIPE GETS A 10 FROM ME !!!!!!

 ISN'T IS FUNNY WHEN YOU TAKE THE FIRST BITE OF A VINEGAR  BASED SALAD DRESSING YOU THINK   WHEWW,, WEE ,,,,,,,,,,,,,THIS IS SOUR BUT AFTER THE NEXT 2 BITES IT STARTS TASTING PRETTY GOOD!!!AT LEAST THAT IS THE WAY IT IS WITH ME .I DECIDED THIS WAS A PRETTY GOOD DRESSING BUT THE CAESAR SALAD DRESSING[ P.93] IS STILL MY FAVORITE.  FOR MY CHOICE OF OIL ,  I USED GRAPE SEED OIL IN  THIS RECIPE   .I GIVE THIS RECIPE A 8 .

WELL,I AM GLAD I HAD  ANOTHER RECIPE WHERE I COULD USE SOME MORE OF THE KALAMATA  OLIVES THAT WERE  LEFT OVER IN THE REFRIGERATOR  .THIS IS A WHIP IT UP AND WHIP IT OUT RECIPE ,VERY EASY .THE ONLY THING WAS THE OLIVE PASTE WAS A LITTLE TOO  OILY .I CHECKED THE RECIPE TO SEE IF I HAD MISS READ IT,  BUT IT SAID 2 1/2 TABLE SPOONS OF OIL. THE OIL WANTED TO RISE TO THE TOP . NEXT TIME I WILL DEFINITELY DECREASE THE AMOUNT OF OIL.BY HALF.I DON'T REALLY CARE FOR OLIVES SO I CAN'T RATE THIS RECIPE FAIRLY .I ATE HALF OF A STUFFED CHERRY TOMATO AND THAT WAS ENOUGH OF OLIVE  TASTE FOR ME .
